A single sitemap is limited to 50,000 URLs and 50MB uncompressed. Beyond that, split into multiple sitemaps and reference them from a sitemap index file.

Do changefreq and priority matter?

Google largely ignores both — they are hints, not directives. lastmod is the most useful field when it is accurate. Do not stress about priority values.

Where do I submit my sitemap?
